Every now and then I get to make something a little different - I love putting together details on an intricate fondant design, but it's sometimes nice to have a change of pace. Recently I made 8 dozen cookies and a batch of peppermint bark for a cookie tray that traveled to a holiday gathering.
This sugar and butter infused package contained two dozen each of Coconut Almond Macaroons, Chocolate Snow Caps, Classic Peanut Butter, and Snickerdoodle cookies plus about 2 pounds of the Peppermint Bark which had Oreo bits between the layers of milk and white chocolate.
The Coconut Almond Macaroons are my new favorite. As an added bonus, they are gluten free too (I've had lots of requests for this lately). The Snickerdoodles were a nice, chewy cookie with a good amount of cinnamon.
The Chocolate Snow Cap cookies were well received, and to me, these are what I picture when I think of Christmas cookies. The Peanut Butter cookies were met with memories of a relative making these in times past, and what better way to serve a cookie than with a sweet memory? ...Okay, maybe with a glass of milk too!
