I made a wedding cake this past weekend with no outer icing. In the cake world, these exposed layers of cake and filling are known as naked cakes because... well, they are naked of any outer icing. The filling that squishes out of the layers is smoothed around the cake giving it a rustic semi-iced feel. Sounds unfinished, but they turn out oh so pretty.
This particular naked cake was lemon. Each layer was brushed with lemon infused simple syrup to keep those unprotected cakes from drying out, and they were then filled with lavender blackberry buttercream. This refreshing combination has been very popular this summer!
The wedding was held at Woodcreek Church in Richardson, and Becca Mercer of Oh Be Joyful Creative was on point with the décor. The room where the reception was being held is mainly where the high school aged kids worship, and she had it transformed into wedding mode for the sweet couple who actually met in youth group at the same church many years ago!
Sometimes a client doesn't know what they want; they only have a general idea of the feel they want their cake to have. That was the case with this gem for a graduation party. The only instruction give, besides size, was that the cake needed to be purple and sparkly.
Sparkly... sprinkles,,, it felt like an easy leap to me! Each vanilla caramel cake tier was iced in a lavender colored buttercream and then rolled in sprinkles. I added purple ribbon and a little bling to each tier to up the sparkle factor. I love how it turned out, and so did the client!
